(( Alternately, i saw this on canada computers, seems similar to the parts i've already picked out and price point too, how awful would this be as an option?

Target: 120 (or upto 144hz) , Budget is around $3,000 (Ontario, Canada) Ideally want games to run stable and not have to run everything on medium/low/off....
Have always just gone with prebuilds but my current setup is starting to struggle with modern gaming now and was looking at something like above, Am in Ontario but limited physical options living on an army base in the middle of nowhere so it'd have to be buy another prebuilt or parts and try to build for the first time, I have a 3 monitor setup all at 60fps (can't handle any higher sadly), I play mainly MMOs; FFXIV and WoW are my main games with a few titles inbetwen; Warframe, Destiny, Baldurs gate 3, Remnant 2, CP2077, Tekken 8.
Ideally would love to run at 120 stable and be able to turn settings high/ultra if able (I rather stable but pretty is a bonus) Since my current setup cannot handle FFXIV stable even at 60, let alone most any titles now days. (remnant 2 was a struggle) Typically game is on the main monitor side monitor 1 is for media youtube/disney+ etc, with the 2nd side monitor being for chats/whatever nonsence needs to be googled in the moment.
Tips/advice appreciated as this is a semi new realm for me
I recommend choosing a 360mm AIO, but the AM5 configuration you mentioned fits perfectly.
I would consider an option similar to this:
Case featuring a front panel type C with ARGB fans
