You're after the LTSC version, but it would need a full reinstall. Honestly, with 1809 joining in November, I'd be able to tackle finding a suitable fix. Keeping on 1809 isn't a sustainable long-term plan.
Consider changing your connection settings to metered. However, if the update was already installed, things might not work as expected.

I hadn't considered that... It could actually be effective. I don’t think anything has already been downloaded; it often just shows “Windows out of date, check for updates” while also pausing to download new Windows Defender definitions. Eventually, this would require me to start the update manually. Of course, it’s not November yet! While it might help, I’m unsure how it works exactly—can you really pick which updates to install or does it always update to the latest version by default? And I’d probably need to buy it on eBay, though that seems risky. (Though it wouldn’t be illegal, I guess?)
Using LTSC lets you disable all updates completely. Isn't it interesting how the main operating system, which makes our PC function, needs constant adjustments to suit our preferences? That’s why I firmly choose not to run Windows 10. It’s a tricky situation, but there are alternative ways (PM for more info).
Really unsure how you kept up with 1809 for so long. Microsoft began pushing updates to move users to 1909 starting in January, aiming to finish before the May support deadline. We're now in September. Just upgrade already—it will push you up to 2004 eventually, and it's a solid release.
