I wouldn't suggest this setup at all. Mac mini hardware is weak and lacks proper cooling, making it difficult to run multiple OSes simultaneously. If you're open to alternatives, consider using a KVM hypervisor (like Unraid or CentOS) with a few MacOS VMs running them; then connect an external graphics card via vFIO to each VM.
