I’ve reviewed your experiences with CentOS and RH’s text-based installers. You can still find older releases that work well, and those installers felt more polished and easier to use compared to other options at the time.

I suggest going for Linux and skipping the heavy graphical setup. If you must have one, you can try xfce and launch the GUI only when necessary. This was my approach with my old server—I never used the X server because I grew more comfortable with the terminal. I’d just connect via SSH directly since adjusting the HDMI output to DVI on my laptop wasn’t worth it.
