Also, I never had to dial any phone number to turn it on, though it's possible things have changed. I bought it in May 2016.

Affordable keys breach MS policies in some way. Official OEM keys cost $80, while retail prices are $120. MS has every right and ability to disable or blacklist any keys they detect as not being used properly. This has occurred to keys and systems 6 to 18 months after activation, or sooner. Or you might be one of the fortunate few who escape.

I haven't had any problems with buying the cheap keys from ebay as long as they're from a big seller. They came quickly in e-mail and activated online. If they might deactivate in future... I'm willing to take that chance. The price is so low anyway even if I rebuy every year it'll work out far less than going retail. Top tip: those keys are usually Pro versions. If you need to convert an install from home to pro, there is a conversion key that does that. It doesn't activate, only change the version of Win10. It wasn't hard to find on Google when I needed it. The only problem I had was when I didn't pay attention and got a key from a seller with no history. They probably googled random keys which didn't work and refunded me. So, a bit of wasted time and a learning experience.
