They have no more instabilities compared to intel and for your usecase amd is basically the choice right now. Like intel can't even touch them for the usecases you describe. Alder Lake MIGHT change that but it's not out so wait for review time. That and it's a new platform so expect it to be a royal pain in the ass with tiny or big annoyances at first.
I've been on the "wait for a bit" train for the last 3 years. LOL. Xeon is a no go for me because it's expensive but also the perf is not great. I say that because my laptop Xeon is much slower (that I got 1.5 years ago!) than my previous gen laptop which was an i7. yes I know Laptop and desktop CPU's are different but still, it just does not make sense to me to move to a Xeon.
Yeah, welcome to the club... That doesn't really mean anything, "Xeon" is just a branding, there is nothing in common between the laptop you have and the workstation/server grade Xeons we're suggesting you consider. Price concerns I can definitely understand, but don't base your choice of desktop cpu on how a laptop performs.
