You can temporarily pause the updates by navigating to Settings > Update & Security > Advanced Options > Defer upgrades (available only for Windows 10 Pro). This will delay the installation for several months, after which the updates will be forced. My suggestion is to pause the updates now and update them manually when you have more time.

Auto-updates must remain enabled. Regardless of Windows version, they apply to Enterprise editions since those are the company servers handling updates throughout the IT update process.
