I believe I’ll soon receive a brand-new laptop featuring a Kaby Lake mobile processor. However, the official announcement states that only Windows 10 is supported. I can install Windows Server 2016 since I can obtain the license for free, but I also have a Windows 8.1 Embedded Industry Pro license and prefer that option. Therefore, should I...?

your laptop probably doesn’t have the necessary drivers for win 8. windows server works well as a desktop option, which is what i relied on during my university days

I would choose Windows Server. It's my go-to daily desktop, and it performs well. You'll encounter some oddities like wireless issues, but overall it functions nicely.

The CPU operates perfectly without issues. It's an x86 model, supporting backward compatibility. However, certain advanced instruction features won't be available on Windows 8.1 due to lack of updates from Microsoft. Essentially, the system will run smoothly but won't fully utilize the latest instruction sets introduced in newer versions.

Microsoft and Intel were planning to try and bypass this. It's difficult to understand exactly what they intended. Microsoft aimed for Skylake and newer models not to run on Windows 7 or 8.1. Many, including myself, interpreted this differently.
