GPU performance shouldn't be influenced by temperature readings. It should only impact your boost clock settings. Experimenting with a higher fan curve might improve results. Are you still using the 388.13 driver? That version may be contributing to the problems. Users on both SLI and non-SLI setups have reported stuttering and low FPS with it. https://forums.geforce.com/default/topic...-30-17-/1/
