The free license has certain limitations. Generally, keeping ESXi over Hyper-V is justified mainly because of the flexibility to virtualize Hyper-V itself. It seems you can't recover the license for ESXi. For confirmation, give them a call. You may retain the VM files but it's not advised; instead, create new ones. If you're comfortable managing Windows Core systems, choose Hyper-V Server as it's free and the next best alternative. Otherwise, it depends on your expertise. If unRAID is your preference, use that.
