Latest updates to Chrome have caused frequent crashes and data loss. I saved all files in C:\Users\me\AppData\Local\Google\Chrome\User Data. I removed the current Google version and added a newer one (86.0.42x). I then transferred the cookie and login information from the backup to C:\Users\me\AppData\Local\Google\Chrome\User Data\Default. According to my understanding, this should have resolved the issue. However, Chrome still doesn’t recognize my username or password. What went wrong, and what additional steps can I take?

As per your input, you confirmed backing up to "C:\Users\me\AppData\Local\Google\Chrome\User Data" but restoring to "C:\Users\me\AppData\Local\Google\Chrome\User Data\Default". Is there an issue?
It's also possible that a downgrade through this location isn't feasible because of modifications in one or more files.

I made a backup of everything in the specified directories. Included were the default and default settings folders. After restoring the cookie and password files, the process completed successfully. In terms of file changes, both appear to use the same format, with versions only differing by a few weeks. This might be the cause, though it’s possible I missed something.
