You're preparing this system as a replacement for an older machine that's causing hardware issues and no longer receives updates. As long as the 24.04 LTS version and later maintains ZFS support, you might test it in a virtual environment for a few weeks before moving to the new platform when official support ends.

I wasn't informed about a fee for this feature. That seems like the optimal solution. However, Ubuntu doesn't include a ZFS setup in the installer (at least currently), so you'll probably need to handle the ZFS pools yourself manually. It's not overly difficult, but if your main reason for choosing Ubuntu is ZFS, there are many alternative choices available.

I've already set up ZFS, while using EXT4 for my operating system filesystem. Unclear why it defaults to NTFS. I picked Ubuntu because after a year of use I didn’t want to switch. It functions well, meets my needs, and stays manageable. I’m thinking about Debian 12 now, though it wasn’t available when I installed Ubuntu lol.
