Is the Ryzen 5 3600 capable of handling the RX 6700 XT?
I was considering upgrading my PC for a 1440p display and just wanted to check if my 3600 model is sufficient.

it will function well in those games. most Ryzen CPUs work smoothly on an AIO 240, though it gets a bit more challenging to cool when moving to the Ryzen 9 5900X because there are two chips under the die instead of one under the Ryzen 5 3600. each chip has eight cores, but two are turned off in the 5 3600.
Late into the match, but based on what I understand, high refresh gaming tends to be more about CPU usage than screen quality. And, although it really varies by game, if you're satisfied with around 60 FPS, you should be fine.
EDIT: The R5 3600 isn't an especially hot component. Even the standard cooler works well if you live in a mild climate with moderate summers. If your setup is a hot enclosure and/or you experience high temperatures, consider upgrading your cooling solution. The CPU starts slowing down once it reaches about 80°C.
