I've been looking for a laptop for 1080p video editing and Minecraft server console work on the go. I found this 2019 Macbook Pro with specs listed as an 8-core i9, specifically an i9-9880h, and a Radeon Pro 560x 4GB and 16GB RAM. I'm sure the CPU will handle these tasks well, but I'm curious about the GPU's capabilities. Any advice or feedback would be greatly appreciated!

It will do minecraft and other similar tasks just fine, however the RX560X is a lower end GPU from a few years ago now, and honestly for most video editing software, you would be best suited with an Nvidia GPU for nvidia encoder. But it will depend on what software you want to use.

I'm thinking about using Adobe Premiere Pro. It doesn't require high performance since I'm used to a Ryzen 5 1600 and an RX 460.

It should behave much like your desktop setup. The RX560x might be slightly slower compared to the RX460.
Optimal performance would come from using an NVIDIA GPU, allowing NVENC to be utilized, though if it meets requirements on your RX460 it should work here too.
The price point seems to be a concern, as this model likely isn't the most cost-effective option.
