If its noise then the fans are either going bad or having to work harder then normal to push air. Get some canned air, open up your case and give it a good cleaning, and while it's open start it up and make sure all the fans look like they are working right. You can buy new fans pretty cheap if thats the issue.

The system temperatures at 121°C would trigger an immediate shutdown, which seems clearly incorrect. The CPU readings appear normal, and the GPU temperatures aren't visible, yet it's hard to believe they wouldn't be excessively high.

Stupid question but when was the last time you cleaned out your system? Make sure that all your fans are indeed working as well.
Also you may want to try and maybe pull, clean and re thermal paste the cooler back on.

Your PC is quite old and has limited sensors. Cleaning it from dust would be a good idea. For instance, the temperature on my motherboard when idle is about 36°C, though I'm not sure if that's accurate. Are you experiencing any issues?
