I purchased two 8GB 2400mhz cards from the same brand (crucial ballistix Sport LT white) and attempted to overclock them to 2660mhz in the BIOS. I didn’t alter the voltage settings; instead, I switched from "auto" to "manual" mode and set the frequency to 2660mhz.

It functions as expected, you can start using it.
HOWEVER, without thorough testing, we can't be sure it's truly stable.
In the end, DIMMs are offered at specific speeds for a reason.
2400MHz models often struggle to exceed 2400MHz under default settings.
You might have been fortunate, but I wouldn't risk it.

DIMMs are typically sold at specific speeds for a reason, and 2400MHz chips often struggle above that. You might have been lucky, but I wouldn't risk it. I only use it for gaming—played Dark Souls 3 for 30 minutes without issues. Also, does this affect the lifespan of the RAM or could it be damaged?

It doesn't necessarily prove full stability. It could be, but it seems less likely from my perspective.
Running at faster clocks won't affect longevity by itself. However, if the auto feature forces additional voltage, it might influence how long it lasts.
