It’s possible to run two servers on separate ports without affecting each other. Each server needs its own dedicated port, so having one per server works. Just ensure the ports are set up correctly and don’t overlap.

As long as the port differs from the one used for Minecraft, it's quite likely. This is what your router uses to identify the server or IP address you wish to join.

The main distinction lies in the port configuration—when not using the default game port, you must include the port number at the end of the IP address.
