This setup isn't ideal for macOS. The GPU uses Pascal technology, which only supported macOS High Sierra at the time—about four years ago. It won't function with any later macOS releases.

It could possibly work, but I'm unsure about its performance on High Sierra. You'd have to confirm if the Nvidia drivers are compatible with macOS, which is something I'm uncertain about. Plus, you'd likely be limited to an outdated macOS version that's losing support, and even then Office wouldn't support it anymore.

If you have a certified Catalina installation hosted directly on Apple servers within a VM, you should still be able to update it through the usual methods provided by Apple.

The GPU support isn't affected by using macOS in a VM since the virtual environment lacks full graphics acceleration. Hardware bypass works differently and isn't relevant for laptops.
