If you attempt to set up Windows 10 on any disk using UEFI, it will generate all the necessary partitions automatically. I’ve done this countless times and I’m confident about it. The snapshots are ready whenever you need them.
The issue seems resolved with your current approach. I'm still sure cleaning the drive completely, disconnecting the second drive, and letting Windows handle the partitioning will fix it. It appears the boot loader might already be installed on the 250, so removing the 120 and then letting Windows sort itself should place the boot files correctly.
