I've been attempting to make my laptop resemble mac osx, but after downloading the theme and adjusting the appearance settings, it still doesn't update. The only adjustments I can make are changing the icons, while the theme itself hasn't altered.

I haven't used xubuntu lately, but with gnome and unity I can adjust those settings using their respective tweak tools. I'm honest, I tried xubuntu 15.10 for about a month before switching to elementaryOS. I understand the noobslabs themes are based on GTK, and from my brief research, GTK support isn't ideal on xfce. Let me know if you're right, I haven't used xubuntu since spring 2015.

You might want to switch to Ubuntu or something similar since it performs better. I didn’t think about upgrading the hard drive because my laptop only has 250GB.

Try real-time versions of mate and gnome. Unity is already set up on two of your machines, and I’m switching one to gnome soon—no time to wait. I suggest it because it’s what you like best. Check out Elementary OS, which ships with a look similar to macOS. If you don’t want to give away money, you can contribute by entering zero in the custom donation field at https://elementary.io

I also used elementary OS on another machine and encountered freezing issues when trying it on an older device.

On Debian Jessie running Gnome 3 is my preferred daily operating system. I believe it offers the perfect mix of visual appeal, customization options, and solid performance.
