Office 2019 or 365 doesn't support ltsc.

It seems it was version 365. Other problems might stem from drives and games not supporting older versions, such as 1507. In about 5 to 8 years, the current 1809 LTS release could be in a similar position again. If you're comfortable with that, go ahead and tinker—just don't worry about missing a Microsoft license audit.

My computer struggles with the latest games, and I expect a new one in about two to three years. I assume the free trial is the only option for activation. How can I begin the trial and keep it active afterward? I know these things are confusing since I’m still getting the hang of it.

To use it officially you must obtain an enterprise license, which can be purchased from Microsoft. You can also try the trial version from Technet. However, for a smoother experience, just install Windows 10 normally if you prefer avoiding any activation problems.
