I purchased a Kingston Fury 16 GB 5200 RAM and am considering an AM5 motherboard, like the Gigabyte B650 GAMING X AX. The support section on the website only mentions Intel XMP, not AMD EXPO. Does that imply EXPO isn’t compatible with my RAM? There’s also a label on the package stating "XMP certified," which is confusing.

It should still function properly. You have XMP certified RAM installed on both your laptop and desktop, with your laptop using 2x32 3200 MHz DDR4 from Crucial paired with a Ryzen 4800H that meets the advertised speeds. Your desktop runs the XMP profile for a 3600 MHz DDR4 Patriot Viper Gaming Steel 4x32, alongside the Asrock Phantom Gaming 4. Meanwhile, your 5900X is operating at its rated performance. Keep in mind that support for DDR5 RAM is still developing compared to DDR4.

Is there just one stick? You really need two. If it were 2x8gb that would be fine. The RAM also works perfectly, I recently built a PC for a friend with the same amount and board. He got a 2x16gb setup instead. The board is really sturdy.
