The issue is limited to the sandy bridge only, meaning the i5 won't work at all

I checked more details and the top option came with a second-gen i3. So it seems the likelihood of it actually working with an i5 3rd gen is extremely low. What’s the point here? It’s just a basic old laptop, even though running Windows 10 would require more RAM and an SSD—something I’ve seen from 4th-gen i5 models already for around $100.

You'll still need a minimum of 8GB RAM and that single-core i5 isn't ideal. Be aware the cooling system is poor, especially for even a low-power Celeron, which could limit performance further. Overall, I wouldn't recommend it. If you need to run an MC server, consider a more affordable desktop like an i5 2400—offers double the speed and is commonly available for under 50 euros. Since it's a server, it just needs to be placed somewhere and accessed remotely via tools like TeamViewer or AnyDesk.
