I currently have a 9600k and plan to match it with at least a 3080. I’m thinking about playing at 2.5k and wondering if upgrading to a 9900k makes sense given the price is now around 330€. For gaming, the improvement isn’t huge, and similar trends are happening with other models. Should I hold off for another generation or two?

considering a 3080 at 9900k isn't the worst option, but if you can secure a 9900k for 300, I'd prefer a 6900xt/3080ti instead. Then you can revisit the CPU upgrade thoughts. The 8600k/9600k might not suffice in certain games or scenarios, even at 1440p, but pushing to a 9900k is still a significant investment—almost as much as a 5600x. You get the sense of it. If you were me, I wouldn't go for a CPU upgrade.

This essentially verifies what I previously believed. The decision to cancel my order of the 3080 hinges on its price, even if the MSRP seems acceptable. Retail costs would still be higher than expected.
