It's really unnecessary for the sake of minimal gains. A 1200W Platinum is more than enough, SLI won't help much, and it's pretty outdated. If you're spending big on overkill components, go for it.

I don't think SLI is gone; the current support isn't strong, but you can still enjoy benefits from two 4K video accelerators. Overkill? Yes, but the setup should last about two more years without needing new parts. AMD isn't a viable choice here.
