Memory options are limited. Any affordable DDR3 slow RAM with no ECC works just fine. It looks like you're using DDR3 1600, which is quite typical.

Dual channel offers improved performance since it doubles the available bandwidth. Therefore, a configuration of two 8 channels is more advantageous than a single 16 channel setup.
