I don't have access to the current system settings, but you can try reverting the Mail Icon design by checking your platform's configuration options or contacting support for the latest UI guidelines.

All visual elements will transition to this new style. Releases will happen gradually. What’s coming next (possibly more items soon) includes Groove Movies & TV Calculator (maybe with graphing), Microsoft Emulator Office app, and Your Phone News Alarms & Clock Feedback Hub. Photos, Voice Recorder are already available: Mail Calendar Edge (the updated Edge browser based on Chromium). Word, Excel, PowerPoint, Publisher, OneNote, plus Windows Terminal. I’m saying the current icons feel a bit odd, particularly with the square background behind the start menu. It seems to suit Windows 10X (ending this year for foldable/dual screens, not laptops or desktops unless there are delays). Leaks indicate Microsoft is considering revamping the Start menu in Windows 10 (non-X), which also means removing Live Tiles as they did on Windows 10X. If accurate, this could be near the end of the year before launch.

They should give us the freedom to pick our preferred icon style. I really don’t like the current look—it resembles the iOS design from around 2010.
