Order it now for a 2x16GB setup. Then add the fake dimss from Corsair or GSKill—you can expand later and achieve the desired style.

For projects using BOINC—similar to F@H—high RAM usage helps run more research instances efficiently. The file system you choose also matters; on UNIX or Linux systems, ZFS uses RAM as a read cache (ARC), allowing faster data access compared to mechanical disks. These are some of the scenarios that come to mind.

Eventually all computers will have 64GB storage. In the DDR2 time, it was common to use 2GB, 4GB works well, everyone believed you never needed more than 4GB. For DDR3: 8GB/16GB, DDR4: 16GB/32GB and in the DDR5 era I think 32GB will become the standard. This is because memory capacity gets cheaper with each generation, plus Windows, games and apps require more space.
