I'm not sure, but you can run two virtual machines on Unraid using a single GPU by configuring the resources properly. Check the specifications and settings for your GPU and VMs.
you will be fine, you wont be able to use IOMMU with the GPU. so no real 3d Acceleration, you'll need to RDP/SSH into the VMs (unless you can configure unRAID to run headless and then pass the GPU to one of the VMs - possible as you configure most of unRAID via a http portal). basically you wont be able to do anything like linus' video on vessal.

It seems to hinge on your goals. A GPU is limited to one VM at a time. If you need both VMs running simultaneously, you could run one with the GPU while the other relies on virtual graphics. You might connect remotely via VNC or Microsoft RDP if a Windows VM exists. Later, you could power down the first VM using its GPU, then swap it to the second VM and reactivate it. Now the second VM would have access to the GPU.
