Hey, with the costs of the 1080s, finding an open box of a 1080 at a local Micro Center or online would be great. If that's not possible, opt for a 1070—it's a solid choice.

8xAA is unnecessary. Cutting it down to 2x gives smooth 75FPS on ultra.

How long should I wait before considering a switch? The 1080Ti clearly exceeds its limits, but I’m not likely to upgrade soon. I’m just exploring and hoping AMD continues to improve their GPUs.

You're definitely set for 2017, though some titles might still pose challenges at the highest quality in 1440p. You can enjoy every game at that resolution and see it in great detail, but you may need to adjust certain settings to get the best performance.
