What sort of FPS would I get on mainstream games like GTA 5, Assassin's Creed, Overwatch with this set up? AMD Ryzen 2600x, GTX 1060 6GB, AM4 Mobo, 2x4GB DDR4 RAM.

Easily max every AAA game 60+ fps. You can even run most games around 60fps 1440p high setting. 2600 and rx480 yet to find a game I can't max at 60fps. A couple games I might turn a shadow down to medium or high to help with busy area for any dips, but will easily handle everythi g

Assassin’s Creed Origins, when run on high preset, averages around 51-53fps, improving to 58 with minor adjustments. Newer titles such as Cyberpunk 2077 will demand more GPU power. Many games can achieve 60fps by using a resolution scale of up to 120% and adjusting settings like shadows from max to high or very high. Destiny 2 consistently runs at 60fps with a shadow setting on high and a resolution scale of 130%, occasionally dipping into the low 50s. Hitman 2016 easily maintains 60fps on maxed-out settings, while The Witcher 3 runs smoothly at 60fps with minimal tweaking. I would also recommend to have 16gb ram instead of 8gb ram for better fps. But if you have a 60hz monitor than keep 8 if you have 144hz monitor i recommend 16gb ram.
