Search the GPU and latest drivers, then use GPU-Z to verify drivers you have. I would assume these are installed, but I don't use NVIDIA Im Team Red FanBoi #1.
Search for "GTA 5 ini file" mods to locate the file and see if resolution adjustment is possible at launch. With games I play it works. However, I'm currently at work and can't do the research for you right now.
