I've placed an order for an i7-12700k and am planning a system upgrade. My current setup includes a GTX 1660 and a 2k monitor with a 1080p secondary display. Usually, I run games on the main screen and use Discord on the other. Since the new GPU will be the limiting factor, could using the i7-12700k as a secondary display offer any benefits for tasks like Discord to free up some frames for my primary gaming experience?

Typically, boards restrict adding features to both GPU and integrated options simultaneously. However, if possible, using them together might improve performance.

You might see some frames per second, though it isn't a concern for me. You'll need to turn on the iGPU in the BIOS when you install the 1070, as this depends on the board but often refers to a secondary display option.

And sometimes visuals might break when moving windows between screens. This often comes down to how well Intel and Nvidia work together in drawing a window across multiple displays linked to different GPUs. Even within Nvidia, performance can drop. I saw someone using a 3070 with a GT 710 for extra connections. It turned out the 3070 was handling all screens, sending frames to the 710 over PCIe. It’s possible that the integrated GPU in the OP was just routing signals through a cable, so the GTX 1660 still rendered both displays, losing most of the advantages of switching to separate GPUs.

You can; I've tested this on my Z370/8700k and my daughter's H310/8350k. Secondary screens connected through the motherboard; display works fine. Useful when your monitors and GPU connections don't align perfectly (HDMI connection). It doesn't seem to boost performance, but they operate together. It also helps with running no-output mining cards.

I've been using this on every build for ten years. I haven't noticed any problems with performance or temperatures. It's built for exactly that, so it makes sense to stick with it. Likely a better fit for the new generation of IGPs.
