She hasn't played much gaming herself, though she's tried a few titles like Skyrim and WoW. She likes visual novels but would appreciate more traditional games and a broader selection. Streaming her play could be fun. I shared the idea with her and she seems interested. For more suggestions, here are some PC-friendly options: Portal, Doki Doki Literature Club, Bastion, Rise of the Tomb Raider, Bioshock, Celeste, Witcher 3, Getting Over It with Bennett Foddy, and Limbo.
Dwarf Fortress could be a great choice, but I doubt she’d enjoy Civ for long—she’d probably get bored quickly.

If it costs a lot, I get it, but it’s incredibly enjoyable if you can afford it. Otherwise, Borderlands offers a great alternative. Dying Light, Gears of War (PC and Xbox), Total War, Dawn of War, Dark Crusade, Mass Effect, Fallout, New Vegas, and possibly Doom 1993 with a brutal mod are all worth considering. Roblox might not be the best pick, but if you find a clan that mods and plays operations, Arma could be fun. Garry’s Mod and Roblox aren’t ideal suggestions, but I’ll keep them in mind.
