I'm not sure if the game supports resolutions other than 16:9 right now. I'm using a 21:9 monitor myself, but it doesn't appear to work. I searched for files in Windows hoping to edit and force a different resolution, but only two options came up. One looks unhelpful when opened. If you've seen E3 footage, Turn 10 has a rig with a racing seat/wheel and three Forza screens, but all run their own developer kits together. That's interesting, though. It might take some time before we see support for other resolutions on PC. Off topic, I'm a bit let down they changed the economy and leveling system from Forza 6 on Xbox One—it wasn't necessary.
