I've been using an i7-7800x for gaming for a few years now and I find it to be a solid CPU, especially considering its affordable price. You're aiming to shrink your desktop setup and the options for compatible X299 boards are limited. For gaming or everyday tasks, the Ryzen 3600 is suitable. You likely won’t be leveraging its advanced features like quad-channel RAM or AVX-512.
