Hi there, I'm just starting out and don't have much experience, but I'm willing to help. Most of my Mac G3 models come with pre-installed operating systems (like BIOS/EFI), so holding the option key won't launch the boot menu like it does on a new Mac. Sometimes if the installation takes too long, it might time out and boot into whatever OS is running, even if you press 'C' or 'option+command+i'. If possible, consider creating a fresh installation.
