I can grasp most concepts well, though Minecraft still poses a challenge. We’re at a stage where my child wants to play, and I’m concerned about online safety and security. I need to configure systems that are solid for Minecraft. I have a home lab in Truenas where I can run mineOS. My main question is whether I must purchase a license for each computer or if one license covers all of them. I understand the only real issue is accessing the MS server, but I’d prefer everything to stay local. Is this feasible, or should I go ahead and buy multiple licenses?

You simply purchase Minecraft once, and it runs locally on one machine. You don’t require two computers for this.

I’d also like to try playing with him on another machine. Or perhaps he has someone visiting, which would avoid sharing a system. That would help clarify things.

If you're concerned about the online experience, you can block internet access and either set up a local multiplayer server or use a hosted service like Realm that’s limited to your kids and friends. Sure, it's true. While there are many window store games you can play on a PC, Minecraft needs you to log in inside the game, making it impossible to share without proper access.
