I want to keep the VPN active all the time for my 2.5GB NIC server. However, I’d prefer not to send all traffic through the VPN. I understand splitting tunneling is an option if needed, but I’m confused about why you can’t just choose one adapter instead.

Not typical behavior here, which explains why this feature isn’t present in the apps you mentioned. It’s unusual to find selective VPN routing enabled via certain network ports, as seen with ExpressVPN and NordVPN.
