I restored my windows on the SSD. Prior to this, I took my HDD out of the PC. The HDD held many games. I need to find out if those games and applications will function properly in the new windows or if I’ll have to reinstall them again?

Applications, they should be reinstalled.
Games, perhaps.
You can likely find the updated Steam client for these titles.
Standalone games will most likely require a full reinstall.
