Greetings, recently I’ve transitioned to a GeForce GTX 1070 Ti and a 1440p, 144Hz display. Nevertheless, I'm still utilizing an Intel Core i5-7600K operating at its standard clock speed (overclocking is impossible due to my motherboard not being a Z series model), and the performance enhancement isn’t as significant as anticipated. My goal is to achieve 144Hz at 1440p resolution; would an Intel Core i7 be necessary?

Typically, no, but it may apply primarily to recent, high-budget releases. I generally don’t feel the necessity to upgrade until my processor reaches 95% utilization while playing (and this isn't a new AAA game with maximum settings like Assassin's Creed Odyssey). Certain games are heavily reliant on the CPU, while others depend more on the graphics card, so it all depends on what you play.

It’s likely more economical to acquire a superior motherboard and engage in overclocking; you may achieve 5 GHz performance with a 7600K.

With my Hyper 212 Evo, I doubt it will allow me to reach 5GHz.
