If it hasn't been overly challenging over the years, I believe it's due to developers finding more efficient methods in software or hardware advancements making certain features affordable. Some old requirements have been swapped for more economical alternatives. For example, AA used to be MSAA but is now replaced by cheaper options like FXAA, MLAA, or TAA. There was also a change in lighting techniques toward more realistic approaches instead of purely artistic ones.
Looking at PC gaming history, "demanding graphics" usually appears in phases rather than steadily. Probably because those leading the innovation were eager for specific results, while others simply adapt to concentrate on building applications rather than engines.
