I just set Cloudfare's DNS to 1.1.1.1 in the private network settings, as described. But after saving, I received a warning that the internet might not be reachable and no sites loaded. This doesn't happen on my PC. When using 1.1.1.1/help on my phone, it confirms I'm connected to that server, but I haven't enabled DoH or DoT. My ISP is BT. I'm unsure if this affects the issue.
