You're looking to upgrade your Asus A320M-K with a Ryzen 5 3600 while keeping the VRM safe. The board is still brand new, so you have flexibility in choosing a higher-end CPU if needed. Consider models like the Ryzen 7 5800X3D or even the Ryzen 9 5900X for better performance without overloading the system.

The VRMs would reach their maximum limit around 5600, based on typical assumptions. If the VRMs are of good quality, they might still function under heavy load without throttling, though performance could drop. They include safeguards that activate when overheating, which also helps prevent throttling. Running a high-core-speed CPU at full speed could cause frequent throttling, lowering performance and causing FPS instability. It's better to stick with 5600 rather than 5600x for better efficiency.

You already own a chip (Ryzen 5 3600 non-X model at 65W) that should work fine as long as it fits its limits. Any part rated for 65W should be suitable in theory, but in practice it’s likely the best it can be—just a standard board built for simple tasks. The Gigabyte A320M version you have is a budget option with minimal VRM design, meant for basic or office use. It’s straightforward, no fancy features.
