at work we use a system that prevents windows from updating automatically, and then lets us handle updates ourselves. for a single "windows 10 computer," the easiest way is to temporarily turn off services tied to updates.

No, it isn't sufficient. Disabling the service doesn't stop updates from being applied; you need to enable it afterward.
