Check if XMP is supported on your Aorus Z690 Extreme with 128GB 5600MHz DDR5 RAM. You can enable it during BIOS setup or via the motherboard settings. Make sure you don’t use BootLoop.

Activate the PC, then continuously press the DEL key repeatedly until you reach BIOS. Choose XMP profile 1. Save your changes with F10 and restart the system.

It doesn't boot properly? You probably have four sticks installed. That's quite a challenge for DDR5 5600. Perhaps it's better to stick with 4800 for now.

The default is set to 4000, but adjusting to 4800 seems possible if safe for your needs.

Activate XMP then adjust the frequency manually to 4800.

You're using a 4x32GB DDR5 system, which is great for performance. Just keep the boot time in mind. If you don't require 128GB of RAM, consider downsizing to two 32GB sticks at 5600MHz. For full 128GB, it might be worth swapping your motherboard and RAM for a DDR4 setup—DDR4 at 3600MHz CL16 can still deliver strong results on a 12900K with 4x32GB.
