Now that DDR5 is widely used, buying DDR4 still has value. Your choice between the 12700k DDR4-3200 and 12700k DDR5-6000 depends on future needs. The lower latency of the DDR4 bundle (10ns vs 12.667ns) might not be significant right now, but considering a potential upgrade to a 14th-gen CPU in a few years, the difference could matter. Your current setup with GIGABYTE Z690 and MSI PRO Z690-A supports both options.

Unless you find it at an extremely attractive cost, it won’t work well. Keep in mind this clip was made a long time ago and they had suggested going for DDR5 already.

You shouldn't be purchasing a 12700k. Are they priced the same? If yes, I'd opt for the DDR5 build but you could also buy it separately—I'd also get a 13600kf and a Z790, plus 32 GB of 3600 DDR4 RAM. PCPartPicker offers this list.

Assisting a user on Discord who was completely out of commission last night, they were using a DDR4-3600 with RGB lighting because they already had that setup. I found the pricing quite shocking when compared to non-RGB DDR5-6000 options. It seems DDR4 isn't worth it right now for a new build.

For an upgrade, choosing DDR5 offers a significant boost in speed. The impact on latency is minimal—around 12.4 ms—which is almost imperceptible for most users.

It would likely cost about 15 CAD extra for the DDR4 package, making the difference minor. The 13600KF is near the top of my priorities, but I’m thinking about the 12700KF bundle since I’ve been studying DDR5.
