I was looking to swap out the fans in the NZXT X52 Rev 2 for improved CPU cooling. I understand the 120mm size is correct, but I’m uncertain about the exact height and whether it would actually fit due to other concerns.

Many enthusiasts use 25mm thickness, which means it's fine to replace the fans.
However, the ones you're considering are 3-pin and not 4-pin, so they won't work properly.
You should stick with the 4-pin models to maintain control similar to the original fans.

yes they should though, but if they don't then you might have to search for some long screws.

Also I own a GTX 1080 Ti with an 11GB hybrid SC2 card, and I'm considering swapping the fan in the water cooler for that setup. Would it be feasible?

Everyone makes errors. Staying fully informed about various hardware details is nearly unachievable. Just take your time and review the components you're interested in.
