My processor cores reaches around 80C during stress tests and low 40s in the UEFI BIOS. Are these typical for an i7? My CPU cooler is a Cooler Master Seidon 120V. I'm concerned these temperatures are concerning because I noticed the assembler applied a significant amount of thermal paste on the cooler side. My motherboard is an ASUS Z170 Pro Gaming Aura.

Your temps are still fine. Since you said it only reaches 80 degrees under stress test, you should be fine. You idle temps seems abit high though, so you should probably look wether the cooler is correctly seated or has adquient amount thermal paste.

Removed the heatsink and discovered a lot of thermal paste. It covered the CPU cooler and even spilled onto the Mobo. Swapped it out and temperatures are now between 60-69°C during stress tests on the Intel XTU.
