Now that you note it, I'd also enjoy a medieval total war game. Heavy artillery and gun-equipped infantry shift the balance slightly. (And castle sieges using artillery fortifications) You want a version where your forces stay strong and don't flee like frightened soldiers—every ending should match this style.
